“Bugnes”, specialty from Lyon, Techné reveals you his recipe!

It’s Shrove Tuesday! For this specific event, Techné follows this tradition

It’s Shrove Tuesday! For this specific event, the tradition from Lyon is to make some “Donuts” named “Bugnes”. Techné shares with you a famous recipe of these Bugnes which has been approved and validated by Fenottes (girls from Lyon) and Gones (boys from Lyon) generations.

Let’s start cook!


  • 1 Kg flour
  • 6 eggs
  • 300 g butter
  • 40 g sugar
  • 20 g yeast bakery
  • 40 ml dark rum
  • 2 teaspoon of salt
  • 2 L cooking oil
  • Icing sugar

Description of the recipe

Step 1:

Remove the butter from the refrigerator and leave it at room temperature to make it soft.

Put the flour, make a well in order to put eggs, sugar, soft butter cut into small pieces, salt and rum.

Mix the baker’s yeast with hot water and put into the center of the well.

Step 2 :

Mix during 10 minutes in order to obtain a soft and non-sticky dough (add little flour if necessary). This mixing step is very important, gluten contained into the flour will make your elastic and airtight dough.

Step 3 :

Put the dough in a covered salad bowl near heat source and let rise 2 hours (the dough will inflate about 50% in volume)

Step 4 :

Roll and cut the dough, make a hole in the center and make a butterfly.

Step 5 :

Fry the bugnes in boiling oil until obtain colored surface. Take out and place them on paper towel, let them cool and put icing sugar.
